Fried fish olives

Fried olives stuffed with fish are a traditional dish from the San Benedetto del Tronto area, a reworking of fried olives all’ascolana (stuffed with meat). These are pitted olives, usually green, stuffed with a fish filling, such as anchovies, tuna or mackerel, mixed with parsley, garlic and other spices. After being stuffed, the olives are pureed in batter and fried in hot oil until crispy golden brown. The result is a tasty and delicious appetizer that combines the intense flavor of olives with the delicate taste of fish.
